Light Key Lime Cheesecake Shots #summer #dessert

Warm climate implies we get the chance to appreciate a wide range of outside exercises like cultivating and biking and simply letting the sun sparkle on our countenances all in all (with some SPF 30 required, obviously!). This is the season that I most appreciate making helped up desserts that won't overload me. These little cheesecake shots are little yet strong; rich and tart with key lime squeeze and pressed with nutrient C.

I was truly eager to discover a sack of Key limes at the market, since they for the most part don't appear here until summer! You'll require around eight for the 1/4 cup of juice that this formula requires. Squeezing these little folks can demonstrate troublesome, yet the technique I use appears to work really well: cut the main 1/4 of the lime off and afterward contort a little fork inside while pressing the lime.

Maybe the most astounding component of this sweet is the covering - it's grain chips! I squashed them in a zip-top pack until they went to fine morsels. It's astounding how well they go with this pastry, and they make for the crunchiest minimal lost fortune at the base of the glass.

  • 8 oz. Neufchatel cheese, at room temperature
  • 1/2 cup (113g) plain Greek nonfat yogurt, at room temperature
  • 1/2 cup (160g) sweetened condensed milk
  • 1/4 cup (60 ml) key lime juice (about 8 key limes juiced)
  • Green food color, optional
  • 1 fresh whole Key lime

Instructions :
  1. Place the bran flakes in a zip-top bag and crush them to fine crumbs with your hands. Place 1 tablespoon of crumbs in each of the ten shot glasses.
  2. Beat the cheese and yogurt together in a medium bowl using an electric mixer. Whip until smooth.
  3. In a separate bowl, stir together the sweetened condensed milk and lime juice. Add the lime mixture to the cheese mixture and beat until well combined. Divide the mixture evenly and tint one portion with the green food color, if using.
  4. Place each portion of batter in a disposable piping bag with the tips snipped, or in zip-top bags with the corners snipped. Pipe the white batter into the glasses halfway up; tap each glass on the countertop to level the cheesecake. Repeat the process with the green batter.
  5. Garnish the tops of the cheesecake shots with additional bran crumbs (you may have some crumbs left over). Cut the whole Key lime into round slices; garnish each glass with a lime wheel.
