How was I expected to roll the cake without breaking it? How was I expected to include the cream? What is cheesecloth? What's more, how was I expected to get the cake out of the treat sheet without having it stick at all losing huge focuses in introduction and pretty factor (we as a whole need a pretty roll).

So I made the move, I had it planned, I had my provisions prepared and the first run through – it was a triumph. My heart was dashing during that brief span outline from getting the cake expelled from the treat sheet (hot!) very quickly out of the broiler, onto soggy cheesecloth and move it (hot!).

After it was moved, I let out a major moan of help. I may have even fell on the kitchen floor in triumph. In reality that is most likely what I did, I am emotional with regards to heating achievement. I'm simply so darn glad.

Ingredients :

  • 3/4 cups flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1 cup pumpkin puree
  • 3 eggs
  • 1 teaspoon lemon juice
  • 2 tablespoons confectioners powdered sugar

For the cream filling

  • 8 ounce package of cream cheese - softened
  • 1/4 cup butter
  • 1 teaspoon vanilla extract
  • 1 cup confectioners powdered sugar

Instructions :

  1. Preheat oven to 375 degrees.
  2. Spray a cookie sheet with your cooking spray to prevent sticking.
  3. In a large bowl mix flour, sugar, baking soda, and pumpkin pie spice.
  4. Stir in pumpkin puree, eggs, and lemon juice. Continue to stir until all smooth.
  5. Pour mixture into cookie sheet, spreading until mixture smooth and even.
  6. Bake for 15 minutes.
  7. Lay a damp piece of cheesecloth down on a clean counter. Sprinkle it with powdered sugar. When cake comes out, turn cookie sheet upside down and put the cake onto the cheesecloth.
  8. Carefully roll up the cheesecloth with cake, forming your pumpkin roll.
  9. Place in refrigerator until cool, about 20 minutes.
