Prior today, I shared our Homemade Pumpkin Pie Spice Recipe since I was preparing these yummy pumpkin cupcakes for us to appreciate for after supper dessert. It's fall so apple and pumpkin sweets are dependably a hit with my family.

My little girl is our greatest pumpkin fan. She was the first to demand some fall pumpkin pastries. I made her these excessively simple Pumpkin Pie Cookies and she was absolutely happy and thought they were the BEST pumpkin treats she has had. I realize she is truly going to name these cupcakes as the BEST pumpkin cupcakes that she has had.

These cupcakes are not "cakey" like a run of the mill cupcake. They are not the accurate surface of pumpkin pie. I state directly in the middle. They are "soggy" like a pumpkin pie yet not as sodden. I am not clarifying them excessively well. Trust me, they are over the top delish and flawless with the whipped cream on top.

Ingredients :
  • 15 oz Pumpkin Puree
  • 1/2 cup Sugar
  • 1/4 cup Brown Sugar
  • 2 Eggs
  • 1 tsp Vanilla
  • 3/4 cup Evaporated Milk
  • 2/3 cup Flour
  • 2 tsp Pumpkin Pie Spice or Homemade Pumpkin Pie Spice
  • 1/4 tsp Salt
  • 1/4 tsp Baking Powder
  • 1/4 tsp Baking Soda

Instructions :
  1. Preheat oven to 350.
  2. Lightly grease cupcake pan.
  3. Whisk together flour, pumpkin spice, salt, baking powder, and baking soda.
  4. Mix together pumpkin, sugar, brown sugar, eggs, vanilla extract, and evaporated milk in large bowl.
  5. Add dry mixture to the wet mixture and stir until incorporated.
